New Chef's Experience Menu: Beets, A Story

Our new Chef's Experience menu launches this week, Thursday, September 17th and runs through September 26th. It's Chef Keith's ode to the beautiful beets of Prairie Creek Farm. Keith's been a fan of these beets for years, but this season he's especially inspired to share the story of Prairie Creek Farm, who needs to sell 4000 pounds of beets at a time when both restaurant and farmers market sales are low. 

If you’re a farmers market junkie, you may be familiar with Prairie Creek Farm from their potatoes. Patrick Thiel is the son of Gene Thiel who created a cult following with his potatoes decades ago. He was a poet, storyteller, and farmer that would become an icon for the Portland Farmers Market also known as "the potato man".

Keith got to know Prairie Creek Farm’s produce while cooking at Gruner: Patrick used to pull up in his pick up truck, piled high with carrots, potatoes and beets. He’d ask how much Keith wanted, then go out and weigh it at his truck. No order forms, phone calls or emails.
